2025 Risky Business Sangiovese
Following on from our original vision, Risky Business utilises the decades of experience of grape grower and viticulturist Rob Quenby and vintner John Waldron. The King Valley grapes are sourced by winemaker Warren Proft to produce delicate and flavoursome Italian varietals.
The fruit was picked with a selective harvester, giving a load of clean, whole berries that were tipped into a small open fermenter. The ferment was hand plunged every day for 7 days before being pressed to barrel to finish primary and malolactic fermentation. It was then aged in older French oak hogsheads for 12 months for a more subtle oak influence, enhancing the wine’s elegant structure and refined tannins.
The wine has fresh red and black cherry fruit aromas with subtle oak in the background. Black fruit flavours on the front lead into a savoury, textured finish. Fine-grained, savoury tannins give structure without dominating the fruit.
Depending on the occasion, this Sangiovese can be enjoyed as a traditional dry red, or lightly chilled as a refreshing option for warmer weather. Its acidity, moderate body and savoury-herbal profile make it very food friendly.
